Description
A traditional Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon olive oil
- Optional: smoked sausage or ham hock for flavor
Instructions
- Soak the black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add soaked peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice, stir, and cover.
- Cook for an additional 20 minutes or until rice is tender.
- Remove bay leaf before serving.
Notes
- Serve warm.
- Optionally top with chopped green onions.
- Can be made vegetarian by omitting meat.
