Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice, often served on New Year’s Day for good luck.
Ingrédients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 cup long-grain white rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon olive oil
- 1 smoked ham hock
Instructions
- Soak the black-eyed peas in water overnight.
- In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add soaked black-eyed peas, ham hock, bay leaf, salt, and pepper to the pot.
- Pour in 4 cups of water and bring to a boil.
- Reduce heat and simmer for 1 hour, or until peas are tender.
- Remove ham hock, shred the meat, and return it to the pot.
- Add rice to the pot, stir well, and cover.
- Cook on low heat for 20 minutes, or until rice is done.
- Fluff with a fork and serve hot.
Notes
- Use fresh black-eyed peas for quicker cooking.
- Serve with cornbread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
