Hoppin’ John soup is a hearty and flavorful dish made with black-eyed peas, rice, and vegetables.
Ingrédients

- 1 cup black-eyed peas
- 1/2 cup rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Soak black-eyed peas overnight.
- Drain and rinse peas.
- In a large pot, sauté onion, garlic, carrot, and celery until soft.
- Add soaked peas, rice, broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- Serve with cornbread for a complete meal.
