  • 1 teaspoon turmeric

  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse lentils under cold water.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, garlic, and ginger. Sauté until soft.
  4. Stir in curry powder, turmeric, and cumin. Cook for 1 minute.
  5. Add lentils, coconut milk, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  7. Season with salt to taste.
  8. Serve hot, garnished with cilantro.
