Description
Lobster bisque plating is an artful presentation of creamy soup made from lobsters.

- 2 lobster tails
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped

- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Boil lobster tails in salted water for 8 minutes, then remove and cool.
- In a pot, sauté onion, carrots, celery, and garlic until soft.
- Add tomato paste, paprika, and white wine; simmer for 5 minutes.
- Pour in seafood stock and bring to a boil; reduce heat and let simmer for 20 minutes.
- Add lobster meat, then blend the mixture until smooth.
- Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with parsley.
