Ingrédients

- 2 lobster tails
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Boil the lobster tails for about 8-10 minutes until cooked.
- Remove the meat from the shells and chop it into small pieces.
- In a pot, melt butter and sauté onion and garlic until soft.
- Add tomato paste and paprika, stir well.
- Pour in the white wine and let it reduce by half.
- Add the seafood stock and bring to a simmer.
- Add the heavy cream and chopped lobster meat.
- Season with salt and pepper to taste.
- Blend the mixture until smooth, then heat gently before serving.
Notes
- Use fresh lobster for best flavor.
- Adjust the thickness by adding more or less cream.
- Garnish with fresh herbs if desired.
