Description
Lobster bisque sauce is a creamy, rich soup made from lobster stock and cream.
Ingrédients

- 2 lobsters, cooked and shells reserved
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 4 cups seafood stock
- 1 cup heavy cream
- 2 tablespoons tomato paste
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- Remove meat from lobsters and set aside.
- In a pot, melt butter over medium heat.
- Add onion, carrot, celery, and garlic; sauté until softened.
- Add lobster shells and tomato paste; cook for 2 minutes.
- Pour in brandy and cook for another 2 minutes.
- Add seafood stock and bring to a simmer; cook for 30 minutes.
- Strain the mixture to remove solids.
- Return liquid to the pot; add cream and lobster meat.
- Simmer for 10 minutes; season with salt and pepper.
Notes
- Serve with crusty bread.
- Garnish with fresh herbs if desired.
- Can be made ahead and reheated.
