Description

Lobster bisque sauce is a creamy, rich soup made from lobster stock and cream.


Ingrédients

  • 2 lobsters, cooked and shells reserved
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Remove meat from lobsters and set aside.
  2. In a pot, melt butter over medium heat.
  3. Add onion, carrot, celery, and garlic; sauté until softened.
  4. Add lobster shells and tomato paste; cook for 2 minutes.
  5. Pour in brandy and cook for another 2 minutes.
  6. Add seafood stock and bring to a simmer; cook for 30 minutes.
  7. Strain the mixture to remove solids.
  8. Return liquid to the pot; add cream and lobster meat.
  9. Simmer for 10 minutes; season with salt and pepper.

Notes

  • Serve with crusty bread.
  • Garnish with fresh herbs if desired.
  • Can be made ahead and reheated.
