Ingrédients

  • 2 lobsters, cooked and shells reserved
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 8 cups water
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for 1 minute.
  4. Add lobster shells, bay leaf, and peppercorns.
  5. Pour in water, bring to a boil.
  6. Reduce heat and simmer for 45 minutes.
  7. Strain the broth through a fine mesh sieve.
  8. Discard solids and cool the broth before storing.

  • Store in the refrigerator for up to 3 days.
