- 4 egg yolks

Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, heat the cream and sugar until the sugar dissolves.
- In a bowl, whisk the egg yolks. Slowly add the warm cream mixture to the yolks, whisking continuously.
- Stir in the chopped lobster, vanilla extract, and salt.
- Pour the mixture into ramekins.
- Place the ramekins in a baking dish filled with water.
- Bake for 30-35 minutes until set.
- Let cool and refrigerate for at least 2 hours.
- Garnish with fresh mint before serving.
