Description
Lobster Newburg is a creamy seafood dish made with lobster, eggs, and brandy, often served in a puff pastry shell.
Ingrédients

- 1 lb lobster meat, cooked and chopped
- 2 cups heavy cream
- 4 egg yolks
- 1/4 cup brandy
- 1 tablespoon butter
- 1/4 cup chopped shallots
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 puff pastry shells
Instructions
- Melt butter in a pan over medium heat.
- Add shallots and sauté until soft.
- Stir in lobster meat and cook for 2 minutes.
- In a bowl, whisk together cream, egg yolks, brandy, cayenne, salt, and pepper.
- Add the cream mixture to the pan and cook until thickened.
- Remove from heat and fill puff pastry shells with the mixture.
- Serve immediately.
