A delicious lobster quesadilla recipe that combines tender lobster meat with melted cheese in a crispy tortilla.

- 1 cup cooked lobster meat, chopped
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 flour tortillas
- 1 tablespoon olive oil
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced bell peppers and cook until soft.
- Add chopped lobster meat and cook for 2 minutes.
- Season with salt and pepper.
- Place a tortilla in the skillet.
- Sprinkle half of the cheese over the tortilla.
- Add the lobster mixture on top of the cheese.
- Top with remaining cheese and another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook the other side.
- Remove from skillet, slice, and serve hot.
Notes
- Use fresh lobster for best flavor.
- Feel free to add other ingredients like jalapeños for heat.
- Serve with salsa or sour cream.
