Instructions

  1. Rinse lobster shells under cold water.
  2. In a large pot, combine lobster shells, onion, carrots, celery, garlic, bay leaf, and peppercorns.
  3. Add water and bring to a boil.
  4. Reduce heat and simmer for 30-40 minutes.
  5. Strain the stock through a fine-mesh sieve.
  6. Cool the stock and store it in the refrigerator or freezer.
