Ingrédients

- 2 lobster carcasses
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves of garlic, crushed
- 1 bay leaf
- 10 cups of water
- Salt to taste
Instructions
- In a large pot, combine lobster carcasses, onion, carrots, and celery.
- Add crushed garlic and bay leaf.
- Pour in water and bring to a boil.
- Reduce heat and simmer for 30-40 minutes.
- Strain stock through a fine mesh sieve.
- Discard solids and season stock with salt.
Notes
- Use fresh lobster for best flavor.
- Store stock in the refrigerator for up to 3 days.
- Freeze for longer storage.
