- 4 large russet potatoes
- 1 cup cooked lobster meat, chopped
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/4 cup green onions, chopped

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- Allow the potatoes to cool slightly, then cut them in half and scoop out the insides.
- In a bowl, mix the potato insides with lobster, sour cream, butter, green onions, cheese, salt, and pepper.
- Fill the potato skins with the lobster mixture.
- Top with additional cheese if desired.
- Bake for an additional 15 minutes until heated through and cheese is melted.
