Ingrédients

- 1 cup brown rice
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 cup red onion, chopped
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the brown rice under cold water.
- Combine rice and vegetable broth in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 40-45 minutes.
- Fluff rice with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and olives.
- Add cooled rice to the vegetable mixture.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Toss gently.
- Top with feta cheese before serving.
