  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the brown rice under cold water.
  2. Combine rice and vegetable broth in a pot. Bring to a boil.
  3. Reduce heat, cover, and simmer for 40-45 minutes.
  4. Fluff rice with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  6. Add cooled rice to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice.
  8. Season with salt and pepper. Toss gently.
  9. Top with feta cheese before serving.
