Instructions

  1. Rinse the black-eyed peas under cold water.

  3. Reduce heat, cover, and simmer for 30 minutes.
  4. Add onion, garlic, salt, pepper, paprika, and bay leaf.
  5. Cook for another 30 minutes or until peas are tender.
  6. Stir in olive oil before serving.
