- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, combine black-eyed peas and water. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Add onion, garlic, salt, pepper, paprika, and bay leaf.
- Cook for another 30 minutes or until peas are tender.
- Stir in olive oil before serving.
Notes
- Soak peas overnight for quicker cooking.
- Serve with cornbread for a complete meal.
- Adjust seasonings to taste.
