Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Mix olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Rub the mixture all over the prime rib roast.
  4. Place the roast in a roasting pan, bone side down.
  5. Roast in the preheated oven for 20 minutes.
  6. Reduce oven temperature to 325°F (163°C) and continue cooking for 1.5 to 2 hours.
  7. Check the internal temperature; it should reach 130°F (54°C) for medium-rare.
  8. Remove the roast from the oven and let it rest for 20 minutes before slicing.
