Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix salt, black pepper, garlic, olive oil, rosemary, and thyme.
- Rub the mixture all over the roast.
- Place the roast in a roasting pan.
- Roast for 15 minutes, then reduce the temperature to 325°F (163°C).
- Cook until the internal temperature reaches your desired doneness (about 135°F for medium-rare).
- Remove from oven and let it rest for 20 minutes before slicing.
