- 2 cups black-eyed peas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 smoked turkey leg (optional)
Instructions
- Soak black-eyed peas overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked black-eyed peas and vegetable broth to the pot.
- Add salt, black pepper, cayenne pepper, and smoked turkey leg if using.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until peas are tender.
- Remove turkey leg, shred meat, and return to pot if desired.
- Serve hot.

- Adjust spices to taste.
