  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 pound fresh sushi-grade fish (like tuna or salmon)
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a rice cooker and cook according to instructions.
  3. In a small saucepan, heat vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, transfer to a bowl and mix in vinegar mixture.
  5. Let rice cool to room temperature.
  6. Lay a sheet of nori on a bamboo mat.
  7. Spread a thin layer of rice over the nori, leaving a border at the top.
  8. Add avocado, cucumber, and fish along the bottom edge.
  9. Roll the sushi tightly, using the mat to help.
  10. Slice into pieces and serve with soy sauce.
