Description

A rich and creamy dessert perfect for Valentine’s Day.


Ingrédients

  • 2 cups heavy cream
  • 1 vanilla bean
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and split vanilla bean until just simmering.
  3. In a bowl, whisk egg yolks and granulated sugar until well combined.
  4. Slowly pour the hot cream into the egg mixture, stirring constantly.
  5. Strain the mixture to remove the vanilla bean.
  6. Pour the mixture into ramekins.
  7. Place ramekins in a baking dish and fill with hot water halfway up the sides.
  8. Bake for 30-35 minutes until set.
  9. Cool and refrigerate for at least 2 hours.
  10. Before serving, sprinkle brown sugar on top and caramelize with a torch.

Notes

  • Use fresh vanilla bean for the best flavor.
  • Make sure the water bath does not splash into the ramekins.
  • Allow to cool completely before refrigerating.
