Ingrédients

  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, mix quinoa, tomatoes, cucumber, red onion, and parsley.
  7. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over the salad and toss to combine.
  9. Serve chilled or at room temperature.

Notes

  • This salad can be made a day ahead.
  • Add grilled chicken or chickpeas for extra protein.
  • Store leftovers in an airtight container in the fridge.
