Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix cherry tomatoes, spinach, and chickpeas.
  5. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  6. Add quinoa to the vegetable mixture.
  7. Pour dressing over the salad and mix well.
  8. Serve warm or chilled.
