- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup chickpeas, drained and rinsed
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a large bowl, mix cherry tomatoes, spinach, and chickpeas.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Add quinoa to the vegetable mixture.
- Pour dressing over the salad and mix well.
- Serve warm or chilled.
Notes
- Feel free to add other vegetables.
- Can be served as a main dish or side.
- Store leftovers in the fridge for up to 3 days.
