Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place salmon and asparagus on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Add lemon slices on top of the salmon.
  5. Bake for 15-20 minutes until salmon is cooked through.
  6. Meanwhile, rinse quinoa and cook in vegetable broth according to package instructions.
  7. Fluff quinoa with a fork and serve with salmon and asparagus.
  8. Garnish with fresh herbs before serving.
