Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper.

  4. In a pot, bring vegetable broth to a boil and add quinoa.
  5. Reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy.

  7. Combine roasted vegetables with quinoa mixture.
