- 1 large butternut squash, peeled and diced
- 2 cups Brussels sprouts, halved
- 1 cup quinoa
- 4 cups vegetable broth
- 1 cup cranberries
- 1 tablespoon olive oil
- 2 teaspoons maple syrup

- Fresh herbs for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 25-30 minutes until tender.
- In a pot, bring vegetable broth to a boil and add quinoa.
- Reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy.
- Stir in cranberries and maple syrup into the cooked quinoa.
- Combine roasted vegetables with quinoa mixture.
- Garnish with fresh herbs before serving.
