Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss chickpeas with olive oil, paprika, garlic powder, and salt.
  3. Spread chickpeas on a baking sheet and roast for 20-25 minutes until crispy.
  4. Steam cauliflower florets until tender.
  5. Mix sliced bell peppers with diced avocado and lime juice.
  6. Serve roasted chickpeas with the avocado and bell pepper mix.
