Description

Vegan Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.


Ingrédients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse and soak black-eyed peas overnight.
  2. In a pot, sauté onion, garlic, and bell pepper until soft.
  3. Add soaked peas, vegetable broth, thyme, and smoked paprika.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add rice and cook for another 20 minutes until rice is tender.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

  • For a spicier version, add diced jalapeños.
  • Can be stored in the refrigerator for up to 3 days.
  • Great for New Year’s Day for good luck.
