Description
Vegan Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
Instructions
- Rinse and soak black-eyed peas overnight.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add soaked peas, vegetable broth, thyme, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice and cook for another 20 minutes until rice is tender.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- For a spicier version, add diced jalapeños.
- Can be stored in the refrigerator for up to 3 days.
- Great for New Year’s Day for good luck.
